Easy to prepare, tasty and very light!

2 whole wheat tortillas
1 (4 oz) can of tuna
1 diced tomato
1 carrot, shredded
4 lettuce leaves, washed
parsley to taste, chopped
salt and pepper to taste
juice of 1/2 lime
2 tbs mayonnaise
1 – In a bowl, combine tuna, tomato and carrot. Season with salt, pepper, lemon, parsley and mayonnaise.
2 – Warm up the tortillas in the frying pan or the microwave.
3 – Spread half of the filling in each tortilla and add 2 lettuce leaves in each.
4 – Wrap it up, folding the sides inwards. Cut in half to serve.
Tips and Options:
- Instead of tuna, use shredded turkey or chicken breast.
- Substitute mayonnaise with olive oil or plain yogurt.
- Use other types of salad, such as cabbage, napa cabbage or arugula.
