Meat so tender it melts

4 lb flank steak
1 small bottle or can beer
1 package onion soup mix
1 large onion, chopped
4 garlic cloves
2 tbs tomato paste
2 tbs olive oil
salt and pepper to taste
1 tbs corn starch
1 can sliced mushroom
1 – Season the meat with salt and pepper to taste.
2 – In the pressure cooker, heat the oil and put the meat to brown, for about 3-4 minutes on each side. Remove the meat and set aside.
3 – Add onion and garlic and cook for about 3 minutes.
4 – Mix beer, tomato paste and onion soup mix.
5 – Put the meat back into the pan and add enough water to cover the meat.
6 – Close the pressure cooker, let it cook for about 30 minutes and turn off the heat.
7 – Open the pan and remove only the meat, slice it and set aside.
8 – Thicken the remaining sauce with the cornstarch and add the mushrooms. Simmer for 5 minutes on low heat until thick.
9 – Pour the sauce over the meat and serve hot.
Tips and Options:
- Good side dishes are: white rice or mashed potatoes and green salad with vinaigrette.
- Use dark instead of light beer.
