Salad with Yogurt Dressing

Crunchy, healthy and super tasty! Not something you can say about all salads!

servings: 2 / preparation time: 20 minutes



2 servings of mixed greens (green and purple lettuce, arugula, watercress)

1/2 cup chopped almonds or walnuts

1/2 cup chopped olives

1/2 cup chopped dried cranberries (or other dried fruit, like apricot, raisins, or goji berry)

Yogurt Dressing:

1 cup plain yogurt

juice of 1/2 lime

1 tbs olive oil

1/2 tbs honey

1/2 tbs mustard (optional)

salt and pepper to taste



1 – Wash mixed green leaves and let it dry.

2 – Finely chop the remaining ingredients: almonds, olives, and dried fruit.

3 – In a small bowl, whisk well all the dressing ingredients and incorporate to the salad.

4 – Divide into two plates and serve.


Tips and Options:

  • Sprinkle Parmesan cheese before serving.
  • Add white cheeses (like panela, fresco, fresh mussarela or cottage), turkey breast, or boiled eggs to the recipe for a meal with more protein.
