Baked Cod Fish and Vegetables

2 lb cod fish

juice of 1 lemon

2 thyme sprigs

salt and olive oil to taste

1/2 onion, finely chopped

4 cloves garlic, minced

2 chopped tomatoes

2 sweet potatoes, chopped into small cubes

chopped parsley (or cilantro) and scallions



1 – Season the fish with salt, olive oil, thyme, and lemon. Set aside.

2 – Chop garlic, onions, tomatoes, and sweet potatoes. Mix well in a bowl, seasoning with salt and olive oil.

3 – In a baking pan, spread a little bit of olive oil and add the pieces of fish.

4 – Cover with the potato mixing.

5 – Bake in preheated oven (350° F) for about 30 minutes.

6 – Sprinkle parsley and scallions and serve.


Tips and options:

  • For this recipe, I used two varieties of sweet potato, for different colors. And served with cucumber salad and Garlic Asparagus.
  • Vary the vegetables used in the recipe with those you already have in the fridge, avoiding waste. Beets, pumpkin, peppers, green beans, broccoli, and cauliflower are great choices.
