Brazilian Cattleman’s Beans

A typical dish from the countryside of Minas Gerais, a state well known for its amazing culinary, and historical sights.

1 lb pinto beans, cooked and drained

2 tbs vegetable oil

8 to 10 oz chopped bacon

1 lb sliced smoked sausage

2 chopped onions

6 diced garlic cloves

2 bay leaves

10 to 14 oz cassava (manioc) flour

salt an Tabasco pepper to taste

1 cup chopped parsley and chives

6 hard boiled eggs, sliced



1 – Cook the beans al dente, drain and set aside.

2 – In a large saucepan, heat oil and place the bacon and sausage to fry until well browned.

3 – Add the onions and mix well. Cook for about 4 minutes, stirring constantly.

4 – Place the garlic and bay leaves and fry for about 2 minutes, mixing.

5 – Add the manioc flour and, stirring frequently, let cook for about 5 minutes.

6 – Put the beans and cook for 5 minutes, in medium heat, stirring constantly.

7 – Taste. Add salt and pepper to taste.

8 – Turn off the heat, add parsley, chives and sliced eggs. Remove the bay leaves, mix well and serve.


Tips and Options:

  • Pork, white rice, collard greens salad and fried pork rinds go well with this dish.
